Head Chef Andy Smith and his brigade create cuisine offering a variety of dishes to please every palate. They use the most local of ingredients, and classic recipes with a modern English twist. He started his career after attending Ashington College and discovered his passion for cooking. He then moved to London to start work at ‘Langhams Brassiere’ before moving around various eateries around London including ‘Aubergine’ and the ‘Regent Hotel’, under Marco Pierre White, learning many skills along the way.

When he returned to the North East he worked within the family run Hotel at Bamburgh, running the kitchens and improving the business before moving to Langley Castle.

Andy has now worked at Langley for over ten years and has seen the Josephine restaurant grow from strength to strength, achieving a Rosette for the food in 2007 and two Rosettes in January 2009. Weddings and other events have also developed to around 180 per year, and Andy is always happy to create the perfect menu to suit any occasion.

At home Andy is keen to experience the different tastes and flavours in cultural cuisine and experiment with them which are sometimes seen in dishes on the menu in the Josephine Restaurant.
